Defiant single malt whisky starts with water drawn from deep under the distillery that is of such natural purity. It is not altered in any way. We use 100% malted barley, cold-ground on our custom roller mill. The freshly milled grist begins the mashing process just moments later. Specially cultured yeast, expertly pitched, gives it life. A handbuilt copper potstill captures the elusive spirit. Toasted American white oak softens the whisky, developing a rich amber color and delicate notes of honey, vanilla, caramel, and tannins.
